A healthy, whole-food plant-based watermelon sorbet that requires NO churning! Made from 3 simple ingredients, this delicious raw vegan treat will keep you cool all summer long.

6 cups watermelon, cubed and frozen
1.50 cups banana, sliced and frozen
½ lime, juiced
1 tbsp maple syrup(optional)

Slice and freeze fruit (excluding lime) to prep. Cutting into smaller chunks will make blending easier.

In a high power blender, add frozen watermelon and banana and juice of half a lime. Blend, using the tamper to help break down the chunks. Do not add additional liquid. You should achieve a smooth texture, no chunks.

Transfer your mixture into a freezer-safe container. Tupperware, or cake pan will work.

Freeze overnight or for about 3-4 hours, until solid.

Allow to thaw for a few minutes before serving, and enjoy.

2 avocados
½ bunch cilantro, chopped
3 limes, juiced
1 jalapeno
cup olive oil
1 tsp taco seasoning
½ tsp sea salt
1 tbsp sugar

2 16oz cans black beans, rinsed and drained
cup tomato juice
½ tsp sea salt

12 corn tortillas
5 tbsp olive oil

Avocado Sauce

Add all ingredients in a blender. Blend until smooth.

Best Black Beans

In a non-stick skillet, over medium heat, heat olive oil, garlic, taco seasoning, and onion powder for 2-3 minutes.

Add black beans, tomato juice, and salt and stir until combined.

Let beans cook, stirring occasionally, for 8-10 minutes, or until most of the liquid has evaporated.

Remove from heat and stir in cilantro.

Crispy Tacos

Heat 2-3 tablespoons of oil in a skillet over medium-high heat.

Add two tortillas to the skillet and allow them to heat in the oil for about 10 seconds.

Cover one side of each tortilla with 1/4 cup of beans, and top beans with 1 tablespoon Vegan Cheese Blend.

Using a spatula, carefully fold the tortilla in half, on top of itself and press down with the spatula to shape the taco.

Cook 3-4 minutes, then using a spatula flip the tacos and cook an additional 3-4 minutes, until browned and crispy.

Continue the process until all the tacos are done, adding additional oil as the pan dries out, and then serve immediately.

This creamy vegan Hummus Pasta is a healthy Mediterranean inspired recipe! It’s all made in one pot and ready in 15 minutes – perfect for a weeknight meal!

1 medium onion, sliced
2 cloves garlic, minced
1 cup spinach
1 cup plain hummus
1 lb spaghetti pasta
1 lemon juice + zest
¼ cup fresh basil, chopped
pinch of crushed red pepper

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente according to package directions. Reserve 1 cup of pasta cooking water, then drain the pasta and return to the pot to stay warm.

In a large skillet, heat the olive oil over medium heat. Add the onions and cook for 5-7 minutes or until fragrant and they soften. Add the garlic, and cook for 30 seconds, or until fragrant. Add the spinach and cook for 1 minute, or until is slightly wilts.

Add the hummus, about ½ cup of the pasta cooking water, the lemon juice and lemon zest, and stir until a creamy sauce forms. Add more pasta water to thin the sauce a little at time, as desired.

Transfer the cooked pasta to the skillet, turn off the heat and toss everything together. Top with basil and crushed red pepper.

Serve immediately with parmesan cheese or basil, if desired.

Vegan Apple Broccoli Salad has everyone’s favourite vegetables and fruits with a slightly sweet and tangy dressing.

4 cups broccoli, cut and shredded
3 apples, diced
¼ cup red onion, diced
½ cup dried cranberries or raisins
½ cup sunflower seeds
Dressing
¼ cup apple cider vinegar
½ cup extra virgin olive oil
2 cloves garlic, minced
1 tbsp maple syrup
½ tsp salt
¼ tsp black pepper

The Salad

Wash broccoli under running water. Cut the florets from the stalks and set the stalks aside.

Cut the florets into very small pieces. See the photo for a visual. Place in a large bowl.

Cut the hard outer skin off of the stems to get down to the tender inside. Discard the outer peelings.

Cut the tender inside stems into matchsticks. Or if you have a mandolin that would work well too. If your food processor has an attachment that will cut the stems into long strips (not grated) then that would work also. Scissors work too. The idea is to have very small sticks of raw broccoli stems. They will hold their shape.

Add to the large bowl along with the florets. Add the apples, red onion, raisins and sunflower seeds.

The Dressing

In a medium bowl whisk together all of the dressing ingredients.

Add the dressing to the salad and toss. Chill until ready to serve.

1 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
2 tbsp soy sauce
3 cloves garlic, chopped
½ tsp thyme, chopped
salt & pepper to taste

Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper, arrange in a single layer on a baking pan and roast in a preheated 400F/200C oven until the mushrooms are tender, about 20 minutes, mixing halfway through.
