Instead of the usual beef or chicken, chickpeas make a high protein vegan alternative in this easy flautas recipe that’s perfect for a busy weeknight. Serve with your choice of guacamole or salsa on the side!
Preheat oven to 350ËšF (180ËšC).
In a large bowl, coarsely mash chickpeas with a fork or potato masher.
Add remaining ingredients and mix well. Spoon 2-3 tablespoons of chickpea mixture onto each tortilla and roll as tightly as possible. Place on a baking sheet, with seams facing downwards.
Bake for 10 to 15 minutes, or until crisp.

I made this for my non-vegetarian parents and boyfriend and they LOVED it. I added some black beans and hot sauce as well and it was AMAZING. This is my new favorite recipe!
